1 can (15 oz.) black beans, drained and rinsed
1 pckg (10 oz) frozen corn kernels, thawed
1 red bell pepper, seeds removed, finely diced
2 scallions, thinly sliced
1 tsp Dijohn mustard
2Tbs cider vinegar
2 Tbs canola oil
salt and pepper to taste
Whisk mustard, vinegar and oil together for dressing. Combine black beans and veggies.
Toss dressing and black bean mix together. Season with salt and pepper as desired.
