Crab Stuffed Shells

Introduction

This is a wonderful dish that is stuffed with flavor yet easy to prepare. The sweet taste of crab is enhanced by ricotta & Parmesan cheeses. Add to that a drizzle of sweet tomato sauce and a sprinkle of basil to get a delicious mix of flavorsl. This is a wonderful dish that is stuffed with flavor yet easy to prepare. Ingredients

    6 large pasta shells (about 52 grams)
    12 ounces crab meat (canned is fine)
    1/2 cup part skim ricotta cheese
    2 tablespoons parmesan cheese, grated
    2 cloves garlic, minced
    2 tablespoons pimento, minced (optional)
    1 tablespoon dried parsley or 2 tablespoons fresh
    salt & pepper to taste
    2 cups pasta sauce (I use Classico Fire Roasted Tomato & Garlic)
    1 tablespoon fresh basil
    1 tablespoon extra virgin olive oil

Directions

PREHEAT the oven to 350

COOK the shells according to package directions and then rinse with cold water.

COMBINE the crab, cheeses, garlic, parsley, salt & pepper in a bowl and stir to combine. Transfer the crab mixture to a quart-size re-sealable bag. Cut the edge off one corner of the bag and pipe the crabmeat filling into the shells.

POUR the pasta sauce into the bottom of an oven proof baking dish or pan. Place the shells on the sauce and bake for 12-14 minutes until slightly golden and bubbly.

SERVE the shells drizzled with the sauce, basil and extra virgin olive oil.
