Introduction

No pasta or starch other than in the carrots No pasta or starch other than in the carrots
Number of Servings: 4

Ingredients

    1 c. dry beans
    1 small can tomatoes
    2-3 oz. roast beef, in juice
    1 carrot, sliced
    1 stalk celery, sliced
    1/2 chopped onion
    1 clove garlic, chopped
    1/2 each oregano, basil, thyme
    pinch lemon-pepper

Tips

Bulky, high protein and calorie.


Directions

Rinse and soak the beans overnight. Next day, boil 1 hr. Rinse and add the beef in it's own broth, chopped veggies, herbs, tomatoes and combine in a pot. Boil until beans and veggies are tender. Add grated parm per serving, if desired.
