Chicken Amaranth

Introduction

A toss-up of all my favorite recipes with a new twist. A toss-up of all my favorite recipes with a new twist.
Number of Servings: 8

Ingredients

    Amaranth
    Diced tomatoes
    onion
    3 peppers (I use a variety of colors)
    Chicken tenderloins
    Chicken broth
    Olive oil

Tips

This is so easy, try it with your favorite veggies or grains.


Directions

Bring broth to a boil and add amaranth. Bring to a boil and simmer for 25 minutes. Meanwhile, Slice, dice and saute veggies in olive oil. Cut up chicken and saute until done with olive oil and a clove of garlic. When done, mix veggies and chicken and serve over amaranth.
