Ingredients

    Onions, raw, 1 cup, chopped
    Bacon, 6 medium slices, cooked
    Beef chuck, arm pot roast, 3 lb
    Carrots, raw, 3 medium
    *Potato, raw, 8 small (1-3/4" to 2-1/2" dia.)
    Onions, raw, 3 small, halved
    Mushrooms, fresh, 1 cup, pieces or slices
    Parsley, .5 cup
    Apple juice, unsweetened, 1 cup
    Beef broth, bouillon, 1 cup
    Tomato Paste, 1 can (6 oz)
    Salt, .5 tsp
    Pepper, black, .5 tsp
    Thyme, fresh, .5 tsp
    Garlic, 1 tsp
    Bay Leaf, 2 whole


Directions

Heat oven to 325 degrees. In Dutch oven place onions, bacon and roast. Cook over medium high heat, stirring occasionally, until bacon and roast are browned (8-10 minutes) Stir in vegetables. Stir in remaining ingredients. Cover, bake for 1 1/2 hour. Uncover, continue baking, stirring occasionally, for 2 to 2 1/2 hours or until fork tender.
