Karen's chicken corn chowder

Ingredients

    4 cups chicken broth low fat, low sodium
    2 cups frozen shoe peg corn
    1 raw onion, chopped
    3 lbs. red potatoes, peeled and chopped
    4 chicken leg quarters, crock potted and de-boned
    16 oz.tap water

Tips

I couldn't find in food library just plain broth from cooked chicken, so I had to choose a low fat low sodium one.


Directions

Crock pot chicken with onion, celery, and carrots. Let cool and debone chicken. The carrots, celery and onion can be consumed separately. After the liquid is cold, remove the fat. put all ingredients in pressure cooker and bring to pressure. cook for 6 minutes.
