3 cups sugar snap peas, trimmed
1 cup frozen corn kernels, steamed
1/2 red onion, sliced
2 Tbsp lemon juice
4 tsp olive oil
salt and pepper to taste
- Remove snap peas from sauce pan and rinse with water until cool.
- Combine all ingredients.
Makes 4 1-cup servings.
