Ingredients

    1/2 cup flour
    1/2 cup lite soy milk
    1 egg
    2Tbsp Butter, unsalted

Directions

Add egg, soy milk, and flour to food processor or blender. Process until smooth.
Add 1 Tbsp of Butter to each of two oven proof 4" ramiken.
Bake on lower rack at 425 for 20-25 minutes until puffed and lightly browned on top.
While still warm, sprinkle with Splenda, and cut into wedges.
Serves 2
*Optional: Squeeze fresh lemon over finished pancake or add fresh fruit or both. Or, top with 1 Tbsp of your favorite fruit preserves.
