Halibut in Papillote

Ingredients

    1/2 halibut filet - you can use other fish - should be about 1 inch thickness.
    1 tsp olive oil - divided
    1/2 cup asparagus
    1/2 cup red, yellow, or orange peppers, thinly sliced
    1/2 small yellow onion thinly sliced
    1/2 cup cherry tomatoes
    salt and pepper to taste
    fresh chopped chives

Directions

makes 1 serving

preheat oven to 400 degrees

lay a piece of parchment or foil large enough to close over fish and veggies, on a baking sheet.

drizzle 1/2 tsp of olive oil on paper. Lay fish on oil and season with salt and pepper.

Layer onion, peppers and asparagus over fish. Add tomatoes. drizzle with remaining oil and season with salt and pepper.

close paper by folding over fish and crimping foil or paper to form a sealed packet. If using paper, a paper clip can help keep it sealed.

Place in oven for 10-15 minutes depending on thickness of fish.

Remove from oven and open packet. sprinkle with fresh chives and serve.
