Potatoe Salad

Introduction

Makes about 30 ..1/2 cups servings Makes about 30 ..1/2 cups servings
Number of Servings: 30

Ingredients

    10 potatoes boiled & cubed
    12 eggs, hard boiled & cubed
    2 large stalks celery, diced
    2 med onions, diced
    4 slices bacon
    1 egg
    1/4 cup apple cidr vinegar
    1/4 cup sugar
    2-3 heaping TBSP Mayo
    1 heaping TBSP yellow mustard

Directions

In a large bowl combine potatoes, hard boiled eggs, celery & oinons.

In another bowl combine egg, vinegar and sugar. mix well.

Chop bacon and fry in medium size skillet. Leave in grease. Stir up the sugar-vinegar mixture and when bacon is done take off heat and stir in this mixture. Add the mayo and mustard..mix well and pour over the potato mixture.

This can be eaten warm or put in the fridge for a cold salad.
