Blueberry Banana Bread

Blueberry Banana Bread

Number of Servings: 16

Ingredients

    3/4 Cup Sugar
    1/3 Cup butter or substitute apple butter or apple sauce
    2-3 Mashed ripe bananas
    1/4 Cup lowfat buttermilk (3/4 tsp lemon juice+milk)
    1 tsp vanilla
    1 egg or 2 egg whites
    1 1/4 cup whole wheat flour (or 1/2 white 1/2 wheat)
    1tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon
    1/8 tsp cloves
    1/8 tsp nutmeg
    2/3 Cup blueberries

Directions

Preheat oven to 350

Grease and flour 8 or 9" bread pan

Combine sugar and margarine

Add bananas, buttermilk, vanilla and egg

In separate bowl combine flour, baking powder, baking soda, salt and spices

Add dry ingredients to wet

Fold in blueberries and add to bread pan

Bake at 350 degrees F. for 45-60 minutes
