Introduction

Number of Servings: 8

Ingredients

    3 medium summer squash, sliced
    2 large baby zucchini, sliced
    1 large onion, sliced
    2 cups cabbage, shredded
    1 cup green pepper, chopped
    6 cloves garlic, minced
    2 tbsp. olive oil
    3 tbsp. balsamic vinegar
    3 tbsp. parmesan cheese, shredded
    Cavendar's Greek Seasoning

Directions

Toss all vegetables in olive oil and balsamic and Greek Seasoning. Bake at 400 degrees in a 9x13 casserole for 30 - 45 minutes.

  • Mmmthis is soo good! I didn't have summer squash and instead used 1 egg plant, also added a few potatoes (have to adjust the nutritional value accordingly) and a few tiny beats, just cause I had them in the fridge. Sooo good. I am super excited! This is an awesome side dish that will last a while! - 6/15/09
