Whole Wheat Peanut Butter Oatbran Cookies

These are an adaptation of a great recipe. Very addicting! For even lower calories you can use organic peanut butter, egg substitute and Brown Sugar substitute. Ingredients

- 1/2 cup trans-fat free margarine
- 1/2 cup Splenda
- 1/2 cup brown sugar
- 1 egg or 2 egg whites
- 1/2 cup crunchy peanut butter
- 1/2 tsp vanilla
- 1 cup whole wheat flour
- 1 1/2 cups oat bran
- 3/4 tsp baking powder
- 1/4 tsp baking soda
Directions
1. Preheat oven to 350F
2. Mix melted margarine with sugars
3. Add egg (or whites); mix well
4. Stir in peanut butter and vanilla; beat until smooth.
5. Add remaining dry ingredients; mix well
6. Drop by tsp onto ungreased cookie sheet
7. Bake 10-12min or until golden brown
Makes approx 46 cookies - 23 servings of 2 cookies

I thought these were good but my husband hated them. They are really dry. Im not a great cook so maybe I did something wrong. - 6/3/08

You may have overcooked them. They aren't super moist cookies but they shouldn't have been that dry.

Will have to make these for my husband who loves peanut butter but with regular sugars ~ artificial sweeteners are poisonous so we no longer use those. Read my rant on my SP if anyone is interested :) - 3/30/08

Please keep comments saying things are "poisonous" out of reviews. Everyone has an opinion on sweeteners but I don't want the word "poison" associated with my recipe!
