PrairieHarpy's Scrambled Eggs Florentine

Introduction

Protein + Veggies = Lovely Breakfast! Protein + Veggies = Lovely Breakfast!
Number of Servings: 1

Ingredients

    1 serving cooking spray (I use Mazola Pure.)
    1/8 c onions, chopped
    1 oz artichoke hearts, chopped
    1/4 cup spinach, chopped
    1/2 cup liquid egg substitute
    1/8 cup feta cheese, crumbled

Directions

Spray skillet with a light dose of cooking spray.


Sautee onions until just shy of tender. Add artichoke hearts and sautee an additional minute.


Add spinach and sautee until it just starts to wilt.


Pour egg substitue evenly around the pan. Scramble until just shy of done. Add feta cheese. Scramble until cheese begins to melt.


Serve.
