Quick and Easy Ground Turkey Tacos

Introduction

These tacos are low calorie , low in fat and loaded with fiber. They are very tasty and nutritious. The whole family will love them! These tacos are low calorie , low in fat and loaded with fiber. They are very tasty and nutritious. The whole family will love them!
Number of Servings: 8

Ingredients

    1 lb. ground turkey
    taco seasoning mix
    3/4 cup water
    1 can of black beans
    1 can Hunts Diced tomatoes w/ basil, garlic and oregano
    Mission Tortilla Low carb tortillas
    1 cup shredded cheese
    lettuce (optional)

Directions

Brown ground turkey in skillet. Add 3/4 cups of water, beans and diced tomatoes. Simmer until desired consistency.
Lay your tortillas on the plates. Spoon meat mixture onto tortillas, add cheese and lettuce. I make mine open-faced but you can top it with another tortilla. Just dont forget to add the calories for the tortilla.
This is very simple to make and loaded with fiber.

    This was really good - I actually ditched the tortilla nad just had everything on lettuce. I made the taco seasoning to avoid all the sodium - there is a great homemade recipe on SP and you usually have all the spices already in the house. - 2/11/10

    JENNMC77 - I rinsed and drained the beans, not the tomatoes, and I used the full 3/4 C of water. I let it simmer until the liquids boiled off to the consistency I like for tacos. - 6/11/09

    Very easy & very tasty, but I found the liquid to be way too much. I even used 2/3 cup instead of the 3/4 and partially drained the beans & tomatoes, but it was still too liquidy & never got to the consistency I typically like for tacos. I'll definitely make again but I'll cut the water way down. - 5/6/09

    This was sooo good! I made it tonight for my boyfriend and I. We couldn't find the tacos that were on the list - maybe they don't sell them in Canada? And I couldn't find the required diced tomatoes, so I just bought regular diced and added in oregano, basil, and garlic. Overall, super delicious! :D - 4/7/10

  • Great meal. Quick & easy just as its titled. I made my own taco seasoning to cut back on sodium. We like spice so I also added red pepper flakes & a few dashes of hot sauce. Used habanero cheese & added jalapeņos to our taco. PERFECT!! Will make again. - 1/30/12

  • very tasty. as others said way too much liquid. i drained my beans and rinsed, then didn't use most of the liquid from the tomatoes and the 3/4 cup water was too much. otherwise tasty. i added chopped cilantro and chopped avocados. will use leftovers as salad tonight. - 8/2/11

  • I've made my turkey tacos similar for years (never thought about adding black beans though, and I keep those on hand!), and I also don't use canned tomatoes. Yes, I miss them, but it makes my feet & ankles swell. I use frozen onion, celery, bell pepper cooked with the meat with cumin & chili powder. - 6/8/11
