VS's Quinoa Salad

Number of Servings: 4

Ingredients

    1 cup of dry quinoa
    1 red bell pepper
    1 orange bell pepper
    1 cup red kidney beans (any kind of bean will do)
    4 tbsp raw scallions
    4 tbsp EVOO
    2 tbsp white vinegar
    1/2 tsp sea salt
    1/8 tsp black pepper

Tips

You can use any kind of bean, or add more than one kind.

As well, salt and pepper may be adjusted to taste.


Directions

Cook quinoa.
Drain once done and rinse with cold water.
Chop up peppers, and scallions.
Make vinaigrette with olive oil, vinegar, sea salt & pepper.
combine all ingredients and chill prior to serving.
