Carrot and Beef Ragout

    2 tbsp. Olive Oil
    3 large onions, chopped
    4 cloves Garlic -- minced
    1.5 lb. Beef Round -- cubed
    3 cups canned mushrooms
    3 cups water
    3/4 cups Tomato Paste
    3 tbsp. Worcestershire sauce
    2 bay leaf
    1 tsp. Tarragon
    1 tsp. Oregano
    1/2 tsp. Salt
    1/2 tsp. Pepper
    8 cups Carrots -- sliced
    1 cup Peas, Frozen
    1 cup Corn kernels, Frozen


in a large skillet, saute onions and garlic in oil over medium heat for 5 minutes. Add beef and brown for 10 minutes. Stir in mushrooms and cook for 5 minutes longer. Add beef stock, tomato paste, spices, salt, pepper, & carrots. Simmer, covered over low heat for 1 hour. Stir in peas and corn and simmer 5 minutes.

Serving Size: Makes 8 servings
