Stewed Peppers and Onions (modified from Health.com)

Introduction

I used 1 Tbsp olive oil instead of the 3 the recipe called for. I used 1 Tbsp olive oil instead of the 3 the recipe called for.
Number of Servings: 3

Ingredients

    1Tbsp love oil
    1 large onion, halved and sliced thin
    2 Bell Peppers (any color. seeded and sliced
    2 cloves garlic chopped fine
    1 bay leaf
    1Tbsp lemon juice
    3 Tbsp coarsely chopped parsley or cilantro
    salt and pepper 1 Dash each.

Tips

can be used as pizza or bruschetta topping.
Serve with chicken or fish also.
Fill an omelet.
I like spicy food so my oil is infused with hot peppers.


Directions

In a large pan ,heat oil and cook onion until translucent, ca 10 min.
Stir in peppers , garlic and bay leaf, cook until veggies are soft about 15 - 20 minutes. Stir once in a while ,make sure to add water if it becomes too dry.
Remove from heat and season with salt pepper and lemon juice, remove bay leaf. Transfer to serving dish and sprinkle with the parsley or cilantro

Serving Size:  serves 3 at a cup each.
