Sauteed Kale and Eggs by Cera

Introduction

A simple but filling breakfast that gets your veggies in! A simple but filling breakfast that gets your veggies in!
Number of Servings: 1

Ingredients

    Kale
    Olive Oil
    Eggs
    salt
    Pepper

Directions

Heat olive oil in non-stick pan on medium until it runs. Spread across the pan. Wash and rip kale up into bite sized pieces. Make sure you strip it off the stem. Dry kale well. Add to pan and saute until kale starts to brown slightly on the edges. Once all cooked, plate and set aside. Crack eggs into the pan, being careful not to break the yolks. Cook until whites firm and flip, cooking to over easy. Once done, lay on top of the kale. Break the yolks and cover the kale. Enjoy!
