Veggie Stirfry

Introduction

Number of Servings: 2

Ingredients

    Zucchini, 1 cup sliced
    Green pepper, 1 sliced in strips
    red onion, 1/2 cup sliced
    asparagus, 5 spears, cut in chunks
    baby carrots, cut in chunks
    olive oil, 2T
    cilantro, fresh chopped
    garlic powder, S&P

Directions

Heat oil in pan. Add peppers and onions. Cook for 5 min. Add asparagus, carrots and zucchini. Saute. Season with garlic powder, salt and pepper. Put lid on pan and cook until veggies are crisp-tender. Garnish with fresh cilantro.\
Makes 2 main course servings or 4 side dish
