Hawaiian Chicken (crock pot)

Number of Servings: 8

Ingredients

    4 boneless, skinless chicken breasts, split into 8 portions
    1 tbs. olive oil
    1/2 cup chicken broth
    1 cup crushed pineapple
    1 apple, peeled and sliced
    3 tbs. brown sugar
    3 tbs. sherry
    1/2 tsp. salt
    pepper to taste
    1 clove garlic, minced
    1 tsp. ground ginger
    1 tbs. soy sauce

Directions

Season chicken with salt and pepper. Heat oil in skillet and brown on all sides. Put chicken in crock pot and cover with remaining ingredients. Cover and cook over low heat in a crock pot for 4-6 hours, or until tender. Serve with cooked brown rice and a green salad.
