My take on ELAINEHN's Protein Pancakes

Introduction

This was posted already by ELAINEHN but I added my notes and pictures. This makes a very dense pancakes that are very filling. I will also try with plain instant oatmeal and add savory seasonings! Number of Servings: 3

Ingredients

    2 packets Quacker Weight Control Instant Oeatmeal - I used Maple & brown Sugar
    2 whole extra large eggs
    2/3 cup fat free cottage cheese

Directions

Mix all ingedients into a blender or food processor to combine.

Heat nonstick pan or griddle to medium, spray with a little cooking spray.

Use 2oz laddle to spoon batter into pan and spread out a little.

Turn once bottom is golden brown, these are done when he center no longer feels squishy to the touch.

Makes 6 pancakes.
