Vegetarian Spinach Lasagna

Ingredients

    1 T. EVOO, separated
    1/2 c. chopped green pepper
    1/2 c. chopped onion
    2 c. chopped spinach, separated
    2 c. 2% cottage cheese
    2 c. Heart Smart Prego Traditional Spaghetti Sauce
    6 1/2 Ronzoni Healthy Harvest Lasagna Noodles
    1/2 c. shredded part-skim mozzarella cheese
    2 T. Parmesan cheese
    2 T. basil, separated
    2 T. parsley, separated
    1/2 t. pepper

Directions

Preheat oven to 350. Saute peppers and onions in 2 t. olive oil. Add sauce, half of spinach, and half of basil and parsley. Cook pasta according to package. Add 1 t. olive oil to water to keep pasta from sticking. Mix cottage cheese with remaining spinach and pepper, and remaining basil and parsley.

Spread 1/3 sauce mixture in bottom of 8x8 pan. Cover with noodles. Spread half the cheese mixture on top of that. Cover with noodles. Spread 1/3 sauce mixture on that. Cover with remaining half cheese mixture. Cover with noodles and top with remaining sauce. Sprinkle with mozzarella and Parmesan.

Cover with foil and bake for 45 minutes, until bubbly. Let sit 10 minutes before serving.
