Introduction

a great brunch favorite in our family! a great brunch favorite in our family!
Number of Servings: 8

Ingredients

    5 russet potatoes
    4 Tablespoons chopped garlic
    4 chopped green onions or scallions
    3 T minced parsley
    1T oregano
    1 cup asiago cheese
    4 T grated parmesan cheese
    1 cup vgetable broth
    salt and pepper to tasete

Directions

Preheat oven to 350. Scrub potatoes, but do not peel. Coat a pie plate with spray-on non-stock coating, Slice potatoes into rounds and cover the bottom of the pie plate with them in a spiral pattern, two layers deep. Mix the rest of the ingredients in a small bowl. Sprinkle one third of the cheese mixture on the potatoes. Repeat twice, ending with cheese on top.Bake 45 minutes, or until potatoes are tender. Let rest 5 minutes, then carefully slice and serve.
