Tamale Pie

Ingredients

    1 lb extra lean ground beef
    1 tbsp olive oil
    1/2 cup chopped onion
    1 tbsp cumin
    1 tbsp chili powder
    1 pkg corn bread mix, prepared as directed
    1 cup corn kernels
    1 jalapeno pepper, diced
    1/2 cup low fat cheese

Directions

Place olive oil, ground beef, onion, and seasonings in a large, oven safe skillet to brown. While that is cooking, prepare corn bread mix according to package directions and preheat oven. Once cornbread is mixed, add the corn, cheese, and diced jalapeno and mix well. After the beef is browned and the onions are tender, drain off any excess fat from the pan. Spread the cornbread mixture evenly over the top of the ground beef. Bake in the oven according to package directions, noting that it will likely take a little longer than a traditional cornbread to fully cook, as the corn and cheese add to the volume.

Makes 8 servings, approximately 1/2 cup each.
