Introduction

An easy make ahead veggie filling for omelets. An easy make ahead veggie filling for omelets.
Number of Servings: 12

Ingredients

    8 cups chopped fresh broccoli
    16 oz. chopped fresh mushrooms
    3 large chopped bell peppers
    10 oz. baby spinach
    2 Tbsp Grapeseed oil
    1 1/2 tsp kosher salt
    Seasoning to taste

Tips

Makes about 12 1-cup servings.


Directions

Preheat large skillet. Add olive oil.

Add all vegetables EXCEPT spinach to the pan. SautÚ until tender, about 7-9 minutes. Add baby spinach and seasoning, and toss until spinach is wilted.

Separate into containers and refrigerate, or use immediately.
