IntroductionI love both of the vegetables; I usually bake fennel, but didn't want to wait...so I combined it with my broccoli rabe recipe:) I love both of the vegetables; I usually bake fennel, but didn't want to wait...so I combined it with my broccoli rabe recipe:)
1 Tbsp Olive Oil
2-3 Cloves Garlic (chopped)
1 Fennel Bulb (tops cut off- and sliced)
1 Bunch Broccoli Rabe (rinsed, cut into thirds)
1 tsp Red Pepper Flakes (optionial)
Dash of Salt (optional)
Heat large skillet on Med heat; add Olive Oil and Garlic. Stir 30 seconds - 1 min. until fragrant. Trim the Fennel Bulb of the tops and trim bottom. Saute, turning frequently unti soft- about 5 - 7 min. Add Broccoli Rabe and cover- to steam just about 5 - 7 min. until leaves are bright green and stems are tender. (If you over cook it turns a dull green, but it still tastes good :)
Uncover and sprinkle red pepper flakes and salt to taste before serving.
(I eliminated the salt and used cooking spray to save more calories)
