Quickie Microwave Muffin

This is relatively low in carbs and can be low, moderate, or higher in fat depending on what ingredients you choose. It's easy, very quick to make, versatile, delicious, and keeps well. Ingredients

    2 Tbsp Flax seed meal
    2 Tbsp Almond flour
    1/2 tsp Baking powder (can omit this for a still tasty but not as light muffin)
    1/2 to 1 tsp Cinnamon, nutmeg, or other spices
    1/2 tsp Vanilla extract or other extract
    1 tsp Coconut oil or other semi-liquid or liquid fat
    1 large egg
    1 tsp Swerve or other sweetener to taste

Tips

I sometimes bake these in the oven so they get a little brown and more muffin-like. Add nuts, extracts, spices and what have you to make savory and sweet versions of this. I split one batch between two small decorative dessert cups and eat one with breakfast and the other as a snack.


Directions

Mix the first 4 ingredients well in a small microwavable bowl or mug. Add the other ingredients and mix well. Pop in the microwave and cook for 1 to 3 minutes until firm.

Serving Size: Makes 2 small muffins or 1 large muffin
