Mongolian Orange Chicken and Vegetables

Introduction

I adapted this recipe from another Orange Sauce recipe to suit my family's tastes. My kids LOVE this! I adapted this recipe from another Orange Sauce recipe to suit my family's tastes. My kids LOVE this!
Number of Servings: 10

Ingredients

    2 lbs Chicken Breasts
    1/3 cup flour
    1 Tbsp Extra Virgin Olive Oil
    1 jar Orange Marmalade
    1 cup BBQ Sauce
    1 can Mandarin Oranges
    1/4 cup Soy Sauce
    2 Tbsp Ginger, pureed or grated
    1/2 tsp Cayenne Pepper
    1 package Mongolian Beef Seasoning Mix
    2 16-oz packages California Blend Vegetables (Broccoli, Cauliflower and Carrots)

Directions

1. Cut chicken into bite size pieces, and place in a bowl.
2. Add flour to chicken and mix to coat
3. Heat oil in a large pot over medium-high heat. Add chicken when hot and cook until no longer pink.
4. While chicken is cooking, mix together Orange Marmalade, BBQ Sauce, Mandarin Oranges, Soy Sauce, Ginger, Cayenne Pepper and Mongolian Beef Seasoning Mix
5. Add vegetables and sauce mixture vegetables and cook over medium heat until heated through and chicken is thoroughly cooked.

**Great over steamed brown rice!
