Tammy's homemade vegetable soup

Introduction

Great for vegetable stock or a wholsome soup Great for vegetable stock or a wholsome soup
Number of Servings: 8

Ingredients

    8 1/4 cups of water
    1 medium onion peeled and cut in quarters
    1 leek cleaned and quartered
    1 large carrot cut into large chunks
    2 celery stalks cleaned and cut into 4" pieces
    1 cup cherry tomatoes
    1 cup red bell pepper cut in large pieces
    6 cloves of garlic crushed and peeled
    2 tsp salt
    1 tsp ground black pepper
    1 sprig fresh rosemary
    1 sprig fresh thyme

Directions

clean, peel, and coursely chop vegetables. Place in large stock pot with herb sprigs. Add water, salt, and pepper. Simmer over medium heat for 35-40 minutes. strain out vegetables and herbs. If using as a stock stop there. If you want a soup, chop vegetables and add back into stock. Makes 8 1 cup servings.
