Elizabeth's Paprikas Chicken

Introduction

Ingredients

    1 TBS olive oil
    1 1/2 - 2 lbs boneless, skinless chicken thighs
    1 large onion, chopped
    1 small green bell pepper
    1 TBS paprika
    1 TSP salt
    Freshly ground black pepper, to taste
    3/4 cup water, divided
    1/4 cup flour
    1 1/2 cups regular or low fat sour cream (or plain greek yogurt)

Tips

I used yellow/orange sweet mini peppers in place of the green bell pepper, added some chicken breasts with the thighs, and used two 5.3oz tubs of greek yogurt and about 2 tbs sour cream. It was delicious!

Directions

Heat oil in a large saucepan over medium-high heat. Add onions and peppers and saute until lightly browned, about 5 minutes. Stir in paprika and salt. Add chicken thighs and brown on both sides, about 3 minutes per side. Add 1/4 cup of the water, cover and simmer on medium-low. After 20 minutes, remove chicken from the pan. Whisk flour, 1/2 cup water and sour cream together in a small bowl. Add to the pan, stirring well. Return chicken to the pan and serve over Hungarian Dumplings, rice, or egg noodles.
