Introductionmuch healthier and yummier than a beef taco much healthier and yummier than a beef taco
1.5 oz Mahi Mahi fillet (just make a 3oz and cut it in half - you'll want leftovers!)
1/2 tsp chili powder
1/4 tsp cumin
pinch garlic salt
1/4 cup carrots, cut into thin strips
scant 1/4 cup broccoli, chopped
1/4 cup green bell pepper, cut into thin strips
about 3 tbsp roughly chopped onion
.5 Tbsp olive oil
whole wheat tortilla (homemade)
1-2 tbsp plain yogurt
Prepare vegetables while fish is cooking, then right before the fish is done, saute the vegetables in the olive oil until crisp tender and hot.
Spread the yogurt on the tortilla, then top with some shredded fish, and some or all of the vegetables (it makes A LOT).
