Pauls Muffin Egg Breakfast Sandwich

Ingredients

    1 English Muffin
    1/4 egg beaters
    1/2 slice pepperjack cheese
    1/2 Tbsp Country crock Spread

Directions

1) Poach 1/4 cup egg beaters. Toast English muffin and spread just a smidge of margaring on it for flavor. Add 1/2 slice cheese, put poached egg on top and enjoy!

    how do you poach egg beaters? Do you have to have a special gadget? - 6/18/08

    I have an omelette pan that folds in half and it came with 3 egg poacher and thats what i use to poach the egg beaters. sorry for the delay, i' was down for several months healthwise

    My kids loved the canadian bacon version of this as a "to-go" breakfast when they would opt to spend Sunday night at home and rise early to drive to Monday morning classes " from real home" - 5/20/08

    I make this also with Canadian bacon and a whole grain muffin. Very yummy and filling. Holds the hunger at bay until lunchtime - 4/1/08

    I make this a lot but usually add one slice of Canadian bacon- the Oscar Meyer brand is just around 43 calories and 4 gm fat! - 4/1/08
