Faux Cornbread

Introduction

Number of Servings: 8

Ingredients

    1 can of Great Northern Beans, drained and rinsed

    4 egg whites

    1 teaspoon of salt

    1 teaspoon of baking powder

    2 tablespoons of olive oil

    1/3 cup of Splenda (or other sugar substitute)

Directions

Pre-heat oven to 400 degrees. Drain and rinse beans. Combine beans with other ingredients in a blender and blend until smooth. Pour in a 9x9 pan (lightly sprayed w/ Pam). Bake for approximately 15-20 minutes (inserted toothpick should come out clear). Makes 8 servings.
