Introduction

Love chicken fajitas. They're one of my weaknesses and...I want to not eat so much meat. I got the Wegman's "Don't Call me Chicken" strips, and this is what transpired. Love chicken fajitas. They're one of my weaknesses and...I want to not eat so much meat. I got the Wegman's "Don't Call me Chicken" strips, and this is what transpired.
Number of Servings: 6

Ingredients

    2 bags of Wegman's "Don't Call Me Chicken" strips or Morning Star Chick'n strips, thawed in fridge over night

    2 tbsp olive oil

    2 bell peppers, cut into strips

    1 cup chopped fresh onions (more or less as desired-Calories are for 1 cup)

    2 tbsp lemon juice

    Season to taste with chipotle pepper, garlic powder, chilli powder. Go easy on the salt or don't use any at all.

Tips

Serve in low-carb fajita wraps with cheese, brown rice, and whatever other toppings you like on your fajita.


Directions

Saute everything in a skillet until the peppers and onions are to their desired tenderness and the tofu is hot.

Serving Size: Makes 6 12-13 strip servings.
