2- 4oz chicken breasts cut into bite size pieces
2 tbsp extra virgin olive oil, divided
1/2 cup chopped onion
1 cup sliced mushrooms, any variety
2 cloves garlic, minced
1- 10 oz package frozen spinach, thawed and squeezed dry
1/2 cup, or more as desired, 99% fat free, low sodium chicken broth
1 pinch ground nutmeg
Salt and Pepper to taste
2 cups whole wheat penne pasta, cooked
1/4 cup parmesan cheese, grated
2. In nonstick skillet saute chicken pieces in 1 tbsp olive oil on medium high heat until browned and fully cooked. Remove from skillet and cover with foil.
3. In same skillet, saute onion and mushrooms in 1 tbsp olive oil on medium high heat until softened and golden brown. Add garlic and spinach. Continue to saute for a few minutes more. Season mixture with nutmeg, salt, pepper. Add chicken broth and stir together, boiling on medium high heat.
4. Add cooked chicken with any juices and pasta. Stir to combine.
5. Toss with parmesan cheese just before serving.
**Mixture should be moist but not soupy. If soupy, continue to saute on medium high heat until liquid is absorbed. If dry, add chicken broth until just moist.**
