Cauliflower Humus

Ingredients

    1 head of cauliflower
    1 can white beans
    2 tbsp. lemon juice
    1 tbsp. Dijon mustard
    1 clove garlic
    1/4 cup almond milk
    Mrs. Dash to taste

Tips

Start with one tblsp of lemon juice and add more to taste


Directions

Heat oven to 375 degrees. Cut cauliflower into florets - spritz with cooking spray and sprinkle with Mrs. Dash - roast for 20 minutes
Drain and rinse beans
Place all ingredients in the blender minus the almond milk. Pulse and add almond milk until you reach the desired consistency

Serving Size: Approximately 1/2 cup
