Chicken Stir Fry

Ingredients

    1 to 1 1/2 lb. boneless, skinless chicken breast, chopped into 1 inch pieces (I use natural chicken tenders from Fran's Fryers)
    3 T. extra virgin olive oil
    1 cup chopped sweet onion
    4 cloves garlic, pressed
    4 cups Napa cabbage, sliced
    1 cup chopped sweet red bell pepper
    1 cup sliced carrot
    1 cup cauliflower florets
    1 cup broccoli florets
    5 T. Bragg's Liquid Aminos, or properly fermented soy sauce

Directions

Heat oil in large skillet. Brown chicken pieces, along with onion and garlic for a few minutes, until the chicken is no longer pink.


Add the vegetables, and Bragg's or soy sauce, 1 tablespoon at a time, until vegetables are sauteed, but still somewhat crunchy. Do not overcook veggies. A good indicator is that the broccoli will turn bright green.


Makes about 8 1-cup servings. I didn't measure, but am guessing.


Serve with rice (not figured into calorie count).


Note: Almost any fresh veggies are good in this. Clean out that vegetable drawer, or better yet, go to a good produce section and try something new!
