Tofu Vegetable Medley

Introduction

Another recipe I made from Clean Eating magazine. I modified it a little (i.e. it called for mango and balsamic vinegar, which I didn't use). Another recipe I made from Clean Eating magazine. I modified it a little (i.e. it called for mango and balsamic vinegar, which I didn't use).
Number of Servings: 4

Ingredients

    Olive oil cooking spray
    1 pkg extra-firm fortified tofu, cut into thin slices
    2 celery stalks, chopped
    1 small onion, chopped
    1 red bell pepper
    1/2 bunch asparagus, ends trimmed and cut in half
    2 cups broccoli florets
    1 cup green beans, chopped into quarters
    3 tbsp teriyaki sauce

Directions

Spritz a large pot with cooking spray and heat over medium heat. Add tofu and saute for 5 minutes. Remove tofu to a plate. Add vegetables, and teriyaki sauce. Saute for 5 minutes, then add tofu back to pot and cook for an additional 3 to 5 minutes.
