1 cup chopped red apples
2 sticks sliced celery
1/4 cup walnuts, chopped
juice of 1/2 lemon
1/3 cup yogurt (or mayo if you like)
1/4 cup raisins (opt, included in nutritionals)
2 cups lettuce
This salad is traditionally served on a large lettuce leaf. For your lunchbox you may prefer use smaller lettuce leaves and keep them in a separate bag until just before eating (to prevent soggy lettuce).
Options: Add some grapes or raisins if you wish.
