Hoppin' John Patties

Ingredients

    2 cups Black-eyed peas, cooked without salt
    2 cups Brown rice, cooked & cooled
    1 cup lean Ham, finely chopped
    1 cup Onion, finely chopped
    2 tbsp garlic, minced
    1/4 cup fresh parsley, chopped
    2 tsp Franks Red Hot
    1/2 tsp Salt
    1/2 cup Egg Beaters
    1/2 cup Plain bread crumbs

Directions

1. In a large bowl combine Black-eyed peas, brown rice and ham. Set aside.
2. Add onion and garlic in pan sprayed with Pam, and saute over medium heat until lightly browned. Add to pea mixture along with parsley, hot sauce and salt and mix well.
3. In small bowl, whisk together egg beaters and tomato paste. Stir into pea mixture.
5. Put half of the mixture in a food processor and pulse until finely chopped, but not pureed. Mix both halves together.
4. Put bread crumbs in shallow dish. Form the pea mixture into 12 patties; press both sides into crumbs to coat.
5. Spray top of each patty with Pam. Heat a large skillet or griddle over medium heat and place patties Pam side down (don't crowd them). Fry about 3 minutes until brown. Spray each face up side with Pam and flip. When browned place in low oven to keep warm, and cook remaining patties.
