Organic Vegan Energy Bars!

Number of Servings: 12

Ingredients

    1.5 cups cooked and washed pinto beans
    1/2 cups almond butter
    1/4 cup dates
    1/4 cup banana
    1 tsp vanilla extract (optional)
    1 tsp ground ginger root (optional)
    1/4 tsp salt

    1.5 cups oats
    1/4 cup hemp chocolate protein powder
    3/4 cup rice flour
    1/2 - 1 cup raisins

Tips

Experiment with different beans (black, garbanzo etc.), nut butters (peanut butter, avocado, pureed pumpkin) and dried fruits (cranberries, cacao nibs, coconut)!!!

Directions

Preheat oven to 350 degrees.

Combine beans, nut butter, dates, banana, vanilla, ginger and salt in a food processor. Process until smooth. Add oats, protein powder and flour; pulse until well mixed. Add raisins, pulse until mixed.

Grease a 13 x 9" pan.Pour mixture evenly into pan. Bake for 15-18 minutes.

Serving Size: Makes 12 3" bar servings
