Vegetarian Sauce

Ingredients

    1 medium onion, chopped
    2 cloves garlic
    1 medium bell pepper, chopped
    1 T. extra virgin olive oil
    3 cups chopped broccoli
    2 cups sliced frozen yellow squash
    1 cup dry lentils
    1.5 c. frozen edamame, prepared

Directions

Thaw and drain yellow squash. Steam broccoli. Saute onion, pepper, and garlic. Cook lentils. Combine everything.

Serving Size: Makes 4 2-cup servings
