Corn Muffins Katie's Favorite!

Introduction

Number of Servings: 12

Ingredients

    1 cup *Quaker Enrich Yellow Corn Meal
    1 cup Milk Organic 2%
    1.5 tsp *Distilled White Vinegar Heinz
    Soak milk, vinegar and corn meal together 10 min

    Add to wet ingredients after 10 min:
    1 egg Egg Organic Eggs
    1/3 cup *Crisco All Natural Pure Vegetable Oil

    Mix Dry ingredients together:
    1/3 cup Granulated Sugar
    1/3 Brown Sugar
    1 tsp Salt
    3.5 tsp Baking Powder
    1 cup All Purpose Unbleached Flour, 1 cup (remove)

Directions

Soak milk and corn meal together 10 min.
Add vegetable oil and egg.
Mix dry ingredients together. Add wet ing to dry ingredients and put in lined muffin tins.
Bake 370 degrees for 21 min. Do not over bake. Toothpick in center to test for doneness should come out basically clean.
