Heather's Gluten Free Pancakes

Introduction

My take on these lovely pancakes. Less salt, less sugar, and dairy and egg free. My take on these lovely pancakes. Less salt, less sugar, and dairy and egg free.
Number of Servings: 8

Ingredients

    1.5 c Jeanne's Gluten Free Mix (see recipe on this site)
    .5 c Treetop Applesauce, no sugar added
    .25 tsp kosher salt
    2 tsp baking powder
    1 TBSP cane sugar
    3TBSP Earth Balance Soy Free spread, melted
    1.25 c unsweetened almond milk

Directions

1. Mix dry ingredients in a small bowl
2. Mix wet ingredients in a large bowl
3. Add dry ingredients to wet ingredients, mixing only until just mixed - you want it to be slightly lumpy.
4. Heat a non-stick pan on a heat slightly higher than medium and pour the batter into the preheated pan to create pancakes of any size you like.
5. Once you see bubbles on top and a little dryness around the edges (about 2-3 minutes), flip over and cook for another 2- 3 minutes.
6. Top with fresh berries, your favorite nut butter, or butter and syrup. Enjoy!

Serving Size: Makes about 8 good size pancakes
