Sweet and Sour Chicken

Introduction

This is a light version of the Chinese classic! This is a light version of the Chinese classic!
Number of Servings: 4

Ingredients

    1lb. boneless skinless chicken breasts
    1 tbsp. sesame oil
    1 medium onion (diced)
    1 large pepper (any color)
    1 cup fresh pineapple chunks
    2 tbsp. orange marmalade (or hot pepper jelly if available)
    1tsp hot pepper flakes (to taste)

Directions

Cut up chicken, peppers, onion, and pinapple

Heat sesame oil in large skillet or wok

Brown Chicken in pan with onions (5-7 minutes)

Add in peppers and pinapple (cook for another 5-7 minutes)

Finally add marmalade and red pepper flakes

Saute for another 3-4 minutes until everything jelly melts and coats chicken and veggies.

Serve over rice.

Serves 4.
