Honey Bran Muffins with Mission FigsSubmitted by: BEFIT13
1 cup all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup wheat bran, toasted
Â½ cup dried mission figs, chopped
Â½ cup boiling water
Â¼ cup (Â½ stick) unsalted butter, room temperature
Â½ cup sugar
Â¼ cup honey
1 egg (extra large), slightly beaten
1 cup buttermilk
Â½ cup demerara (turbinado) sugar
Line 12 muffin cups with paper liners. Stir flour, baking soda and salt in small bowl to blend. Combine bran and figs in another bowl; mix in 1/2 cup boiling water.
Beat butter and sugar in large bowl until creamy, and add honey and egg. Beat in buttermilk alternately with flour mixture in two additions each. Mix in bran mixture. Divide batter among lined muffin cups. Sprinkle with demerara sugar.
Bake muffins until tester inserted into center comes out clean, about 20 minutes. Turn muffins out onto racks and cool completely.
