Meatballs - Homemade - Freezer Cooking

Introduction

Cooking & keeping batches of these in your freezer will give you one less reason to hit that drive through! Very quick main-course meat that you can pop directly from the freezer and have heated through in no time! Number of Servings: 8

Ingredients

    2lbs Ground Beef
    2 eggs
    1 cup milk
    1.5 cups oats
    1 onion- diced
    2tsp each salt, chili powder & garlic
    1tsp pepper

Directions

Mix everything together. Form into meatballs and place on baking sheet so they are not touching. Bake at 400 degrees for 15mins, turning once 1/2 way thru cooking.

Makes about 40- with a couple extra for taste testing :)

For Freezer Cooking, let cool then loosen from pan. Set pan in freezer for an hour- making sure meatballs aren't touching. Once frozen, sort appropriate portions into labeled freezer bags. (I usually use 4 quart freezer bags with 10 meatballs in each for 2 adults with big appetites.)


I prefer to keep them frozen- they warm up fast! Can nuke in microwave with sauce for quick meatball sub, add to sauce on stove for a quick spaghetti, add to crockpot for some recipes- use your imagination!
