2 medium-large Eggplant, peeled and sliced into 1/4" slices 1 jar favorite pasta sauce 1 16 oz package low fat 4-cheese italian cheese
Spray inside of crock pot with non stick cooking spray. Peel and slice eggplant. Place eggplant in single layer in bottom of crock pot, pour in 1/3 of pasta sauce and top with 1/3 of cheese. Repeat layers ending with last 1/3 of sauce and cheese on top. Cover and cook on low for appox. 3.5 hours. Cut into 6 equal size servings.
