Low Fat Carrot Raisin Maple Muffins

Introduction

Almost no fat, no added sugar (unless you want to add a glaze or brown sugar/cinnamon topping!) carrot raisin maple muffins. Super moist and delicious but almost like a cupcake with glaze or sugar topping. Ingredients

    1/4 cup fat free greek yogurt
    3/4 cup maple syrup
    1/4 cup unsweeted organic apple sauce
    1 cup rolled oats
    1 cup carrot pulp (from juicer or shredded and squeezed)
    1/4 cup almond milk
    1/2 cup raisins
    1 1/4 cup whole wheat or multi grain baking flour
    .5 teaspoon salt
    1 tbsp baking powder
    .25 teaspoon allspice
    .25 teaspoon nutmeg
    1 teaspoon cinnamon


Tips

Omit greek yogurt and double apple sauce to make it vegan.


Directions

Preheat to 375.

Wisk yogurt, applesauce, and maple syrup. Add carrots, oats, raisins, and almond milk.

Sift flour, salt, baking powder, and spices.

Combine until just mixed.

Fill paper cups lined muffin tins, almost to the top.

Optional: Top with brown sugar and cinnamon, or combine 1/4 cup confectioners sugar, 1 tbsp of maple syrup and water until thins out.

Bake at 375 for 20-25 minutes or until top begin to brown.
